If you are not eating a rainbow of colors, eat a small amount of a vegetable you are not used to or don't like by a adding a small bit to something you like. I am not a fan of zucchini but I had some in my Szechuan Shrimp Stir Fry last night, and I liked it! I thought I hated zucchini. I just didn't like it boiled, which is not the best way to get all of the vitamins anyway. I like most of my vegetables raw or slightly cooked.
